Café du Soleil is situated beside the river Stour in Canterbury occupying a former 18th century wool store. The restaurant is accessed by its own bridge over the river. The building was restored 20 years ago with a grant from English Heritage and it now showcases the extensive use of reclaimed building material from the 14th century city wall.
The focus of the kitchen at Soleil is the huge wood burning oven. Locally sourced hardwood from coppiced woodland in Blean Forest is used to fuel the oven which makes it effectively carbon neutral. Many of the dishes are cooked in the wood burning oven, where the temperature can reach over 500°C. Vegetables, fish and meat can be cooked quickly; sealing in all the goodness whilst imparting a unique flavour. |
